There is no excuse for actually making this dish unless you have some genetic predisposition to Kale. I&#8217;ve reduced the original recipe by 4 to yield 2 servings. Just remember, kale sucks.<\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS extra-virgin olive oil, divided<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cloves garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp kosher salt, divided<\/span><\/li>\n<li><span class=\"quantity\">1 <\/span><span class=\"ingredient-name\">bunch kale, stemmed and coarsely torn<\/span><\/li>\n<li><span class=\"quantity\">\u2153<\/span><span class=\"ingredient-name\">cup water<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium shallot, thinly sliced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp packed light brown sugar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">pinch <span style=\"color: #ff0000;\"><strong>cayenne pepper<\/strong><\/span><\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">TBS cider vinegar<\/span><\/li>\n<\/ul>\n<p>Heat 1 TBS <strong>oil<\/strong> in a large pot over medium heat. Add <strong>garlic<\/strong> and \u00bc tsp <strong>salt;<\/strong> cook, stirring, until fragrant, about 1 minute. Add the <strong>kale<\/strong> and stir until starting to wilt. Stir in <strong>water.<\/strong> Cover and cook, stirring often, until tender, 8 to 10 minutes. You may need to add more <strong>water<\/strong> to keep it from burning.<\/p>\n<p>Meanwhile, heat the remaining TBS <strong>oil<\/strong> in a small skillet over medium heat. Add <strong>shallots<\/strong> and cook, stirring often, until starting to brown, 2 to 3 minutes.<\/p>\n<p>Sprinkle with <strong>brown sugar, <span style=\"color: #ff0000;\">cayenne<\/span><\/strong> and the remaining \u00bc tsp <strong>salt;<\/strong> cook, stirring often, until golden-brown, 2 to 4 minutes more.<\/p>\n<p>Remove from heat and carefully stir in <strong>vinegar.<\/strong><\/p>\n<p>Pour the <strong>dressing<\/strong> over the <strong>kale<\/strong> and toss to coat and serve warm.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 2 Servings Adapted from: Eating Well Kale sucks!
