
Banana Bread

- ½cup sugar
- ¼cup shortening
- 2large eggs
- 1cup very ripe banana from 3 to 4 bananas
- ½tsp table salt
- 2cups Jiffy mix or 2 cups unbleached all-purpose flour, 1 tsp baking soda and 1 tsp creame of tartar
Preheat oven to 350°F.
Grease and flour a 9x5x3 loaf pan.
Cream the sugar and shortening together. Add 2 eggs slightly beaten, the banana and the Jiffy mix or flour mix and mix well.
Pour into prepared pan. Bake for 55 minutes. Let cool in pan for 5 to 10 minutes. Remove from pan and cool or wire rack.
